The vineyards are located in Sulcis, the most suitable area for this vine, cultivated on sapling sandy soils.

The average age of the vines is 70 years, with a planting density of around 10,000 vines per hectare. The very low yield per hectare guarantees a high quality of the bunches, which are harvested in the second half of September, once they have reached perfect ripeness.

This is followed by fermentation in steel at a controlled temperature for 10 days and a minimum refinement of 8 months in 750 liter French oak barrels before bottling. It rests at least 2 months in the bottle.

Colour: impenetrable ruby red.

Smell: intense and elegant with a pleasant hint of red fruits, spices and Mediterranean herbs.

Taste: round, with good structure and excellent balance. The fruity and spicy notes are found. The finish is persistent.

Pairing: Perfect with well-seasoned first courses, roast suckling pig and lamb, medium or long-aged Sardinian pecorino. Also excellent with tuna roasts.
